Steak Citrus Salad

This is a great recipe that incorporates fresh citrus with a steak salad!  The dressing is very easy to make and much healthier than bottled dressings.

Steak Citrus Salad

Serves: 6 (2 cups each)

All you need:

2 Tbsp. orange juice

2 Tbsp. red wine vinegar

1 tsp. olive oil

2 tsp. honey

1 1/4 tsp. Dijon mustard

1 (8 oz) lean beef steak, cut into thin strips

Salt to taste

1 (6 oz) package baby spinach

1 (8 oz) package sugar snap peas, coarsely chopped

2 cups chopped fresh mushrooms

2 oranges, peeled and separated into segments

All you do:

  1. To make the dressing, whisk together the orange juice, red wine vinegar, olive oil, honey and mustard in a small bowl. Set aside.
  2. Heat a large nonstick skillet over medium-high heat. Stir-fry steak two minutes or until desired doneness is reached. Season lightly with salt.
  3. Toss together spinach, sugar snap peas, mushrooms, orange segments and steak in a large bowl. Toss with dressing before serving.

 

Nutrition facts per serving: 130 calories, 3 g fat, 1 g saturated fat, 0 g trans fat, 25 mg cholesterol, 95 mg sodium, 15 g carbohydrate, 3 g fiber, 8 g sugar, 11 g protein.
